Chocolate Chip Cookies (grain-free)

Super healthy chocolate chip cookies, free from grains, dairy and refined sugars. They are crispy on the edges. Gooey and chewy on the inside. Lightly golden brown and loaded with chocolate chips, with a hint of coconut.


Makes 12 large cookies

  • 1 c coconut flour
  • 2/3 c ground almonds
  • 3 T ground flax seeds
  • 1/2 c almond butter
  • 1/3 c coconut oil
  • 1/2 c coconut palm sugar
  • 1/3 c maple syrup
  • 2.5 T almond milk
  • 2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 3/4 tsp baking powder
  • 1 cup chocolate chips

Preheat the oven to 180 celsius. Combine the coconut flour, ground almonds, ground flax seeds, cinnamon and baking powder in a bowl. In another bowl whisk to together the almond butter, coconut oil, coconut palm sugar, maple syrup, almond milk and vanilla. Add the dry ingredients to the wet and whisk together until well combined, then fold in the chocolate chips. Using a ice cream scoop, scoop the dough onto baking paper on a oven tray, and press them down to form cookie shape. Bake for 15mins until the edges are just starting to brown.
