Pancakes

It was Shrove Tuesday yesterday, so we all love to treat ourselves to a good pancake, but as a vegan its not so easy, as traditional pancakes are filled with mostly dairy products. So for those of you who would like some healthy dairy free alternatives, here are 2 great pancake recipes i love!

Raw Maple Pancakes

Ingredients:

  • 1 banana
  • 1 c pecans, soaked
  • 1/4 C pine nuts
  • 2 T flax meal
  • 1/3 c maple syrup
  • 1/4 T vanilla extract
  • pinch salt
  • Water as needed

Directions:

  1. Blend all ingredients until smooth
  2. Spread batter onto teflex sheet in circles to your desired size
  3. Dehydrate 24-48hrs

If you don’t have a dehydrator, use baking paper as your dehydrator sheet and place in the oven leaving the door ajar. Flip and peel once the upside is dry.

Vegan Pancakes 

Ingredients:

  • 1/2 c Spelt flour
  • 1/2 tsp Cinnamon
  • 1 tsp baking powder
  • 1/2 c Almond milk (or milk of choice)
  • Pinch of salt

Directions:

  1. Mix all ingredients together in a bowl
  2. Put a tsp of coconut oil in the pan to stop it sticking
  3. Spoon the batter onto pan on med-low temperature
  4. Flip pancakes when bubbles pop and cook other side

Syrup + topping ideas:

Maple syrup, coconut oil, fresh berries, banana slices, cocoa nibs, nut butter, goji berries, chia seeds, crushed nuts

Or Mix 1 T coconut oil with 1/2 T maple syrup for a low sugar syrup.
