Protein rich, gluten free and super easy to make, this bread will surely become a staple.
It is high in many beneficial nutrients such as magnesium, B-vitamins, phosphorus, potassium and calcium. The bread predominantly consists of Quinoa which is one of only a few plant foods that are considered a complete protein containing all 9 essential amino acids. It also comprises of chia seeds delivering high amounts of omega-3s.
It is suitable for vegan, paleo, gluten free or sugar free diets and tastes great topped with avocado, nut butters, jam or even drizzled with just a little oil. The mixture can also be used to make a pizza base or pancakes.
Makes 1 loaf
- 1 3/4 cups quinoa seeds soaked overnight for 12hrs
- 1/4 cup chia seeds soaked overnight with 1/2 cup water
- 1/4 cup olive oil
- 1/2 cup water
- 1/2 tsp bicarbonate of soda
- 1.5 tsp lemon juice
- pinch of salt
- herbs, spices, garlic (optional)
Soak the quinoa and chia seeds the night before.Preheat the oven to 180•c. Strain and rinse the quinoa thouroughly and place in a high speed blender with all the remaining ingredients and blend until a batter consistency is achieved. Put in a bread tin lined with baking paper and bake for 1hr. Allow to cool before eating.11
