Raw Millionaire Shortbread

As a child these were one of my favourite treats to have, and since being raw/vegan I haven’t tried anything like them. So I decided to replicate a raw/vegan version, and they tasted amazing and better than I ever remember!!

Recipe (makes about 20 squares)

Shortbread:
4c Cashew flour (can make by blending up whole cashew nuts, don’t blend for to long though as will turn into butter!)
1c Shredded coconut (dessicated)
4T liquid sweetener
2tsp Vanilla Extract

  • Process ingredients together until you get desired texture
  • Press into a pan, trying to get as even distribution as possible
  • Place in freezer to let harden before spreading caramel on top

Caramel:
1c Macadamias, soaked
3/4c Cashews, soaked
2 1/4tsp Vanilla Extract
pinch Salt
1/2c Liquid Sweetener
2T Coconut Oil, melted

  • Blend all ingredients together until you get a smooth consistency
  • Spread the caramel on top of the shortbread and place back in the freezer allowing this layer to harder up before pouring the chocolate on top

Chocolate:
1/2 c Cocoa Powder
3/4 c Cocoa Butter, melted
1.5 tsp Vanilla Extract
1/4c Liquid sweetener (I use maple syrup)

  • Finely chop cocoa butter and dehydrate until melted, add the rest of the ingredients and mix together
  • Pour on top of caramel and freeze to allow the chocolate to set (you can temper the chocolate as well to get that harder snapping texture)
  • Once frozen slice into size of choice using a sharp knife, may need to warm the knife slightly to get a clean slice.
