I absolutely love pesto and put it on top of just about everything. It’s definitely a staple food in my house, and is super simple and east to make.
Traditional pesto contains parmesan, so the secret ingredient in this pesto is the nutritional yeast. It gives it that cheesy, nutty flavour without compromising your plant based diet. Nutritional yeast is also usually fortified with vitamin B12 so is a great addition to any vegan diet. There are also many other ways you can use nutritional yeast from topping it on popcorn, adding it to salad dressings, in soups, topped on pasta to stirring it into mash potato. Try it out, you won’t be disappointed!
(Makes 1 cup)
- 2c fresh basil
- 1/2c pine nuts
- 4T nutritional yeast
- 1 small clove of garlic
- 1/2c cold pressed olive oil (can substitute for any other oil you like, I like to use cold pressed flax seed oil as well)
- 1 T lemon juice
Place everything in the blender and blend until smooth.8
