The best ever vegan cookies

If you have ever been to cookies and scream bakery in Camden then you will know what i am talking about when I say “their cookies are literally heaven in a mouthful.” They are soft and gooey with warm melted chocolate chips and yet dairy, gluten and refined sugar free! Ever since I first found out about them around 2 yrs ago, I have been trying to re-create something that tastes as good and finally with my sisters magic touch – a cookie recipe that is as good as cookies and scream!!! They are crunchy on the outside but soft and gooey in the inside!

Ingredients

  • 2 T ground flax seeds
  • 2 C gluten free flour mix (I like to use Bobs red mill)
  • 1 C almond butter
  • 1.5 C palm sugar
  • 3/4 C apple puree
  • 1/2 C chocolate chips (optional)
  • 2 tsp molasses
  • 2 tsp vanilla extracts
  • 3/4 tsp baking powder
  • 3 T water
  • Pinch of salt

Preheat the oven to 180degrees. Mix the ground flaxseeds and water together and leave aside for around 10 mins. Get another bowl and mix together all the dry ingredients (flour, salt, baking powder). In another bowl mix together the almond butter, palm sugar, molasses, apple purée and vanilla extract, once well combined add the flax mixture. Then combine the wet and dry ingredients together adding the chocolate chips if you would like (the cookies taste just as good without them!). Scoop out a large tablespoon for each cookie placing them onto baking paper on an oven tray, and place in the oven for 13/15mins making sure you turn them round half way. Take them out and put on a baking rack, in order to not burn the bottom of the cookies. And enjoy!
