Tomato, Butter Bean Soup

As we are now in autumn the weather is slowly starting to cool down, and the evenings are getting pretty chilly. A warm bowl, of smooth and creamy tomato and butter bean soup is the perfect recipe to start of autumn with. Its super nourishing and energising and is definitely my favourite soup of all time. I like to make a huge batch of this soup and fill the freezer with it, for a quick and easy meal.


(Serves 3)

  • 200g carrots, chopped
  • 125g chopped tomatoes (fresh/tinned)
  • 320g cooked butter beans
  • 1/2 red pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 clove of garlic, chopped
  • 15g fresh basil leaves
  • 1 tsp tamari
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • 1/2 litre hot water
  • coconut oil

Heat coconut oil in a pan. Add onion and garlic and sauté until soft. Add carrots, red pepper, oregano and paprika and continue to cook for another 5 minutes. Add the chopped tomatoes and tamari and stir, cooking for another 15 minutes. Now add the cooked butter beans and hot water, cover and let simmer until the vegetables are soft. Add the fresh basil and any extra seasoning you desire (I personally never use any salt/pepper!). When the soup is ready use a hand blender to puree until smooth. Serve the soup in bowls and garnish.
