Vegan Cauliflower Pizza

Such an awesome vegan, gluten free alternative to pizza:

Pizza Base:

Makes 1 pizza

  • 3 c ground cauliflower (florets from 1 cauliflower)
  • 3/4 c buckwheat flour
  • Flax eggs (mix 1/4 c flaxseeds with 3/4 c of water)
  • 1 T dried oregano
  • 1 T dried/fresh rosemary


Preheat the oven to 180° C and line a baking tray with baking paper. Blend the cauliflower in a food processor to a fine rice like consistency. Place the cauliflower in a mixing bowl and add the buckwheat flour, herbs and flax eggs and mix until thoroughly combined. Transfer to the baking paper and flatten into a pizza shape using your hands, leaving the edges raised slightly. Place in the oven for 25 mins or until golden.

Meanwhile you can prepare your pizza toppings, from tomato sauce to steamed vegetables, get creative! Once the base is ready take it out of the oven and cover with all your toppings. Once topped place it back in the oven for another 5-10 mins until at your desired consistency, I like my edges slightly crispy! Then eat till your stomachs content!!

I topped mine with: raw tomato sauce, steamed courgettes and sweet potato, spinach, red onions and some tomatoes.
