After trying Deliciously Ella’s sweet potato brownies from Raw Press the other week, I wanted to try my hand at creating a paleo as well as being vegan version, so without any grains in. And I have to say these are possibly the best brownies I have ever made, super rich and fudgy, they are the perfect afternoon snack. Free from refined sugars, gluten, dairy, oil and grains, they are super healthy and packed full of natural goodness, containing only 7 plant based ingredients!
The main ingredient in these brownies is sweet potato, which is packed full of vitamins and minerals. Just one large potato will provide an adult with all the vitamin A they need, and a very good source of vitamin C and manganese. It is also a good source of dietary fibre, potassium and vitamin B6. They are low in fat, high in nutrients, easy to digest and are extremely beautifying. Not only do these brownies boost the health benefits of sweet potatoes but also the superfood properties of cacao. In its raw state, cacao contains more than 300 different chemical compounds and nearly four times the antioxidant power of your average dark chocolate – more than 20 times than that of blueberries!

- 500g sweet potato
- 1/2 c coconut flour
- 1/2 c ground almond
- 12 medjool dates
- 6 T raw cacao powder
- 80g melted chocolate (I used raw Om bars but you can use any chocolate you like)
- 1/2 tsp cinnamon
Set the oven to 180ºC. Peel and chop the sweet potatoes into chunks and steam them for about 15 minutes until soft. Once they are soft place them in a food processor with all the rest of the ingredients and blend until smooth. Place the mixture into a lined baking dish and put in the oven for 20 minutes. Allow them to cool before chopping in to squares.10
